How to size a commercial steamer for a restaurant or central kitchen: capacity per meal service, gas vs electric, steam quality, and what to check before you buy.
A commercial steamer looks simple: a box that makes steam. In practice, choosing the wrong one shows up as slow service at peak hours, uneven cooking, or a machine that cannot keep up with cleaning between batches. Here is how to size one properly.
Start with trays, not with litres
Steamers are sized by the number of GN trays or by meal capacity per hour. Work out your busiest hour first:
| Operation | Peak meals per hour | Typical steamer size |
|---|---|---|
| Cafe / small restaurant | 40–80 | 4–6 tray countertop |
| Full-service restaurant | 100–200 | 6–10 tray floor standing |
| School or staff canteen | 300–800 | 10–20 tray, or two units |
| Central kitchen | 2,000+ | Multi-unit steam cabinet line |
Rule of thumb: one GN 1/1 tray holds roughly 20–30 portions of rice or 15–20 of steamed buns. Size for your peak hour, not your daily average.
Gas or electric
Gas heats faster and usually costs less to run where gas is cheap. It needs proper ventilation and a gas safety certificate.
Electric is easier to install, more precise on temperature, and better where gas is unavailable or ventilation is limited. Running cost depends entirely on local electricity prices.
For a central kitchen running 8+ hours a day, the energy difference is significant — calculate annual running cost, not just purchase price.
Steam quality matters more than power
Two steamers with the same kW rating can perform very differently. What to check:
- Steam saturation — dry steam cooks faster and does not water down food
- Recovery time — how long to return to temperature after the door opens
- Door seal quality — leaks waste energy and cause uneven cooking
- Drainage — blocked drains are the most common failure in hard-water areas
Water quality and scale
Scale is the number one killer of steamers. In hard-water regions, specify a water softener or a self-descaling model. A unit that needs descaling every month will be neglected within a year.
Cleaning between batches
If you switch from rice to fish to buns in one service, the steamer must be cleanable in minutes. Ask how the trays, shelves and drain pan are removed — and whether it needs tools.
What to confirm before ordering
- Peak meals per hour and tray count required
- Available power: single-phase or three-phase, total kW
- Gas type and pressure, if gas
- Water hardness and whether a softener is needed
- Floor space, door width and access route
- Steam extraction and ventilation capacity
- Local spare parts and service response time
Huayi Smart Solutions supplies commercial steamers, steam cabinets and combi ovens for restaurants, canteens and central kitchens, with export documentation and spare parts support. Send your peak meal count and we will match a model to it.
