Sizing a commercial deep fryer: litres per hour, oil turnover, recovery time and the running costs most buyers forget.
A fryer that is too small ruins service at peak hour. A fryer that is too large wastes oil every single day. The right size sits between those two, and it is determined by output per hour, not by tank litres alone.
Size by output per hour
| Operation | Portions per hour | Tank size | Configuration |
|---|---|---|---|
| Small cafe / takeaway | 30–60 | 8–12 L | Single tank, countertop |
| Restaurant | 80–150 | 12–18 L | Single or twin tank |
| QSR / fried chicken | 150–400 | 2 × 18–25 L | Twin tank, floor standing |
| Central kitchen | 500+ | Continuous line | Conveyor or batch line |
Rule of thumb: 1 litre of oil handles roughly 8–12 portions per hour of chips, fewer for breaded products.
Recovery time is the number that matters
When you drop frozen food in, oil temperature drops. The time to return to setpoint is recovery time. A fryer with slow recovery produces pale, oily food during peak service, no matter what the thermostat says.
Ask for recovery time in minutes at a defined load — for example, from 180°C back to 180°C after loading 1 kg of frozen product. Under 2 minutes is good for high-volume frying.
Oil management decides your running cost
Oil is a consumable, and it is expensive. Three features extend oil life:
- Cold zone below the heating elements, so crumbs settle instead of burning
- Filtration — daily filtering can double oil life
- Precise temperature control — oil degrades fast above 200°C
On a busy fryer, oil can be 3–5 times the purchase price of the machine over three years. A cheaper fryer with poor oil management is rarely cheaper overall.
Gas or electric
Gas fryers heat faster and recover quicker; electric fryers are easier to control precisely and simpler to install. For high-volume QSR, gas usually wins on running cost. For smaller sites without gas, electric is fine.
Safety and compliance
Check for a thermostat cut-off, over-temperature protection, and a drain valve that cannot be opened accidentally while hot. In many markets a flame failure device is mandatory on gas units.
Also confirm the oil drain height and container clearance — draining 20 litres of hot oil into a low tray is a burn risk.
Before you order
- Portions per hour at peak, and product type (chips, chicken, breaded)
- Tank configuration: single, twin, or split pot
- Recovery time at a defined load
- Filtration: built-in or external
- Power or gas supply and ventilation
- Oil capacity and disposal method
- Spare parts availability: baskets, thermostats, drain valves
